The real "makers" of Fontina are the mountain pastures of Aosta Valley and the autochthonous breed of cow. Cheese making, following the DOP production regulations, does not alter the characteristics of the fresh milk which pass unchanged into the cheese.

The distinctive signs of Fontina are: the certification marks stamped by the individual producer when the cheese is made, the mark of selection and the sales mark, a thin strip on which the consumer can find those standard graphics, common to all producers, which identify Fontina.
